I was thinking to make this boondi ladoo for a long time but crochet made me hitched to it :).
Boondi Ladoo is a dessert/snack made from besan/kadalamavu soaked in sugar syrup…that makes me think of a scene in a Hindi film where junior Hrithik Roshan grabs some of the ladoos during a marriage function :) and his mother noticing it. What should I say more??? Its truly a mouth-watering recipe.
Makes -16 ladoos Start to finish – 45 minutes
besan/kadalamavu – 1 1/4 cup
baking soda- a pinch
water- almost 3/4 cup for mixing + 1/2 cup minus 1 tablespoon for the sugar syrup
sugar- 1 1/2 cups
oil – to fry the boondis
cashew nuts, broken – a handful
ghee – 1 teaspoon
yellow food color – a pinch
Step 1 Fry the cashewnuts in ghee and set aside.
Step 2 Sieve the besan without any lumps. To this add baking soda and yellow food color.
Step 3 Heat a pan with sugar and water to make the sugar syrup. Stir in between. Boil till the sugar is dissolved. Keep it in sim till all the boondis are fried or else it will again crystallize.
Step 4 Mix the besan with water to make a batter of dosa batter consistency,pouring water in parts.
Step 5 Heat oil in a pan on medium heat. Pour a ladle of batter to the perforated ladle,keeping the ladle on the top of the oil (as shown below) and let the boondis fall into the oil. When it is half fried take it out from the oil and transfer it to the sugar syrup.Repeat this with the rest of the batter.
Step 6 Once all the boondis are fried, switch off the flame and add the fried cashew nuts to this and mix. Allow to cool a little so that we are able to hold the boondis in our palm.
Step 7 Next, make balls with boondis. Let cool completely and store in air tight containers.
1. To make the boondis, we need 2 perforated ladles. One, to make the boondis, and another one to take out the boondis from oil.
2. Perforated ladle should be wiped after each use or else it will leave tails in boondi.
