Raita is nothing but pachadi in Malayalam.Raitas give the usual ‘yogurt’ an embellishment.Raitas can be prepared with vegetables and fruits and flavored with a variety of seasoning to make different types of Raita.It is used as a sauce or a dip in the Indian Restaurants here. It can be used as a side dish to be eaten with different main course dishes of Rice without taking much of our time.
curd/yogurt-1 1/2 cup
sugar – 1 tsp
beetroot(boiled and skin peeled),cubed – 1
malliyila/cilantro – 1-2 tbsp
green chilly-1 tsp
coconut,grated -1 tbsp
oil – 1 tsp
geerakam/cumin seeds – 1 tsp
kayam/asafoetida – 1/4 tsp
Blend curd together with salt and sugar.
In a bowl with cucumber,cilantro,green chilly,beetroot and grated coconut add this mixture.
In a pan with oil, splutter the mustard seeds and add asafoetida.
Pour this over the raita.
