Manga Achar / Mango Pickle


Ingredients

raw mango,cut into bite size pieces – 2 large
oil – 4 tsp
mustard seeds – 1 tsp
garlic, sliced – 9-10
ginger,chopped – 1/2 inch
green chili, chopped – 7
curry leaves – a few
red chilli powder -1 1/2 tsp
kashmiri chilly powder – 2 tsp
kaayam /hing – a large pinch
fenugreek powder – 1/2 tsp
vinegar -2 tsp
salt – to taste

Method

Cut the mangoes into small bite sized pieces with the skin on.Add salt and combine well. Keep it refrigerated for 2 days.

Heat oil in a pan and add mustard seeds. When they pop up add curry leaves,garlic, ginger and green chillies and saute till the raw smell disappears.
Add both chilly powders.Add 1/4 cup hot water and bring to boil until it becomes thick.
Switch off the flame.
Add kaayam and fenugreek powder.
Add the mango pieces and mix well.Add vinegar.Leave it in the pan for few hours and then transfer to bottles. Refrigerate it to last long.
