Strawberry-Banana Muffins


all-purpose flour-1 3/4cup
granulated sugar- 3/4 cup
baking powder- 1 teaspoon
baking soda – 1 teaspoon
salt- 1/2 teaspoon
egg – 1
canola oil or vegetable oi- 1/2 cup
sour cream or plain yogurt- 1/2 cup
vanilla extract -1 teaspoon
mashed ripe bananas (2 to 3 medium)- 1 cup
fresh chopped strawberries -1 to 1 1/2 cups


Preheat oven to 350 degrees F/180 degrees C. Grease a 16 cup muffin pan or place 16 paper muffin cup liners in muffin pan.

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.

In another bowl, whisk the egg, oil, sour cream (or plain yogurt can be used) and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chopped strawberries.

Fill greased or paper-lined muffin cups two-thirds full. Bake in preheated oven for 20 minutes or until a toothpick inserted near the center comes out.Cool for 5 minutes before removing from pans to wire racks to cool completely.

Makes 16 muffins.
